Funfetti Cupcakes

Let’s have some more cupcakes, shall we!

These are quite possibly the cutest things I have ever made.

They smell so delicious and they are so adorable!

Sprinkles are awesome on their own… and then when they’re put inside cupcake batter?  Fabulous!

I love the little pops of color that are “sprinkled” throughout the cupcake.

Funfetti Cupcakes

(ever so slightly adapted from Eat Live Run)

Makes 12 cupcakes

1/2 butter or margarine, softened

3/4 cup sugar

2 eggs

1/2 cup milk

1 tbsp vanilla

3/4 tsp baking powder

1 1/2 cups flour

1/4 cup sprinkles

Preheat oven to 350°.  Prepare your muffin tin with cupcake liners.

Cream together butter and sugar in a bowl and then add the eggs (one at a time, beating after each addition).

Combine milk and vanilla in a separate small bowl (or the measuring cup you used to measure the milk)

In a separate bowl, combine the dry ingredients (flour and baking powder).

Alternate adding half of each of the milk/vanilla mixture and dry ingredients to the butter/egg batter, stirring in between to combine.  Be careful not to over mix.

Stir in sprinkles!

Bake for 25 minutes until a toothpick inserted in the middle comes out clean.

Cool on a wire rack.

Once cool, frost with your favorite vanilla frosting (I suggest buttercream) and top with more sprinkles.
